There he would begin another nursery and also build a home. As the village became settled, it was named Nursery, and Onderdonk was its postmaster. From there he could pack and ship across Texas and to other states and abroad. In 1872 he published his first catalog and in 1879 another edition, a copy of which is now in the University of Delaware Library Special Collections. Included in Part III of this book are reproductions of the 1888 catalog from the Barker History Center at the University of Texas, and Onderdonk's sketches of fruit from his 1884 catalog loaned by Mr.
Buhler of Victoria, Texas. Of major importance was the classification of peaches which Onderdonk wrote and published, and which was acclaimed by H. P. Gould, United States Department of Agriculture pomologist. He wrote: "The first system worked out on the botanical classification of the peach was made by Gilbert Onderdonk of Texas and was published by the U. S. Department of Agriculture in 1887. " Also quoted in the July 1986 Texas Horticulturist is this statement from Bluefford Hancock: "Onderdonk was particularly noted for the development of peach varieties.
